I love to cook so I want my knives to be sharp. And I enjoy writing reviews for people that have a passion for what they do. Elwin is following the family tradition his grandfather started many years ago. He has quality and service way up on his list. I loved to hear all he had to say about his craft and I am very happy he is getting all the recognition he deserves. I was allowed a quick look inside the workshop and it is immaculately clean and very organised. And how cool is it to have a chef with three Michelin stars like Massimo Bottura on your client list?

I wasn't happy with the sharpening job by my previous place, so I went to find a more professional place. Went out of my way quite a bit to visit the store, my knife had quite a few chips along the edge so I was hoping they'd be able to fix it. While I was there I went to look at their santokus and picked up a beautiful Ryusen. I got a very detailed history of the knife, since the owner (I assume) had actually been there and knew all about it. A few days later I receive my other knife good as new. A very good experience overall, they clearly love what they do and are very skilled.

I sent two Shun Classic knifes to be repaired by Rangelrooij via DOK in Centrum. I was so sure the knives would not be able to be saved; one had its entire tip plus a large chunk of the blade break off due to dropping it on a stone kitchen floor. The other was a small paring knife with a large part of the tip broken off, also due to droppage. Both came back looking as good as new, and much sharper than the rest of my set. I will need to send the others to be sharpened to match the two that were repaired.
