Het restaurant is vernoemd naar het beroemde wijnhuis uit de St-Emillion in de Bordeaux: Château Cheval Blanc, dat bekend staat om zijn uitstekende Grand Cru's. Het team in de keuken is jong, ambitieus en goed op elkaar ingespeeld. Chef-kok Huub van der Velden, sinds 2007 in het bezit van een Michelinster, is een ware kunstenaar met een eigen stijl en smaak die garant staat voor een continue kwaliteit van zijn keuken. Het team laat zich inspireren door seizoensgebonden producten, vergeten groenten en maakt verrassende creatieve variaties op klassiekers. Dit komt voornamelijk naar voren in de diverse moderne en klassieke kooktechnieken die toegepast worden. Ieder gerecht wordt met zorg bereid en kent zijn eigen garnituur waarvan ieder onderdeel op smaak wordt gebracht. Het uiteindelijke resultaat zijn tongstrelende gerechten.

One of the few places with nothing to complain about. Maybe it's a bit small. Expect prices in line with the quality. I loved the food quality but also the fact that the waiters and waitresses could actually hold a conversation about the food they were serving.

GLORIOUS EVENING! The moment you walk into Cheval Blanc, you feel welcomed and are made perfectly comfortable. The whole evening was really just delightful from start to finish. The food is meticulously prepared, and all the little details that I look for in a Michelin Star restaurant were met with delight. A pleasant surprise to the evening involved our Host who I believe may have been named Ton- His knowledge of every dish was spectacular and he really knew how to work you through the food to such a degree that I wanted to ingest his very descriptions. His voice was both commanding and inviting to each and every bite. I would most certainly return, and kindly thank Cheval Blanc for a truly memorable evening.
